Granny Smith apples, unpeeled, chopped into large pieces including cores |

fresh mint, chopped |

Instructions
Combine apple pieces with water and mint in a large pan. Bring water to a boil then reduce heat and cook 20 minutes, until apples are soft.Add vinegar and return to boil. Reduce heat again and simmer, covered, five more minutes. Purée the apples with a held blender.
Spoon the apple pulp into a large, fine mesh sieve, suspended over a large bowl. Leave to strain for several hours.
Measure the juice, then pour into a large pot. Add the sugar and heat up. Keep stirring to make sure the sugar gets dissolved and does not stick to the bottom of the pan. Bring to a boil and cook for 10-15 minutes. Using a metal spoon, skim off the surface scum.
Continue to boil and cook for another 15 minutes.
Remove from heat and allow the jelly to cool for a few seconds. Try pushing it with your fingertip. If it wrinkles up, itis ready.
Serving suggestion: Use with your lamb roast.
