I was eating some fajitas and rice one day and wondered “how about I combine this somehow?” This is the result. Green salad and corn bread are very good complementary dishes.

Ingredients
Serves: 4- 1 tablespoon extra virgin olive oil
- 1 cup chopped onion
- 1 tablespoon grated garlic
- 1 1/2 lean hamburger
- 3/4 cup uncooked quick rice
- 1 egg, beaten
- 1 1/2 teaspoon ground cumin
- 1 tablespoon ancho chile powder
- 2 seeded guajillo peppers, chopped fine
- 1 tablespoon dried cilantro
- 1 teaspoon salt
- 1 1/2 cup salsa
Preparation method
Prep: 20 mins | Cook: 1 hour1. Preheat oven to 350 degrees F (175 degrees C).
2. Heat the olive oil in a skillet over medium heat. Cook the onion and garlic until onion begins to soften, about 3 minutes.
3. Combine the hamburger, rice, egg, cumin, ancho chile powder, guajillo peppers, cilantro, and salt in a large bowl, mixing thoroughly.
4. Pack into a meatloaf pan and bake in the preheated oven for 45 minutes.
5. Top with salsa and cook until the sauce has dried, about 10 to 15 minutes.
