Mexican bean soup recipe details
Ingredients
4 large | ham hocks (meaty) |
8 bunch(es) | green onions |
2 clove(s) | garlic, to taste |
2 slice(s) | pickled Jalapeno peppers, use small,then add |
2 can(s) | pinto beans, or white beans |
dash(es) | salt and pepper to taste |
Instructions
Wash the Ham Hocks well and put them in a large Dutch oven (very large pot)with cold water, to cover. Bring to a boil and simmer for 2 hours, or until meat is nearly falling off the bone.Take Hocks out of water and put on plate. Strain liquid with cheese cloth and return to Dutch oven.
Clean Hocks of everything except the lean meat. Return meat to pot and continue to cook on a simmer.
Clean the onions and chop them up into 2.5 cm pieces. Add onions and galirc to pot. Add Jalapeno peppers, making sure you add just enough for you taste of spiciness.
Simmer meat, onions and jalapeno peppers with dashes of salt and pepper to taste for another hour.
Add Pinto Beans and bring to a boil. Cook on a simmer for at least half an hour or until tender.
