Ingredients

1  rock melon, peeled, seeded and diced
1  green chili pepper, seeded and chopped
1 clove(s) garlic, minced
3  red onions, sliced
30 g brown sugar
2 tbsp curry powder
2 tbsp olive oil
75 ml orange juice
3 tbsp dry white wine
5 tbsp balsamic vinegar
5 sprig(s) lemon thyme, chopped

Instructions

Caramelize the sugar in a saucepan. Add all the other ingredients and bring to a boil. Cook over medium heat for 15 minutes.

Pour the hot chutney into sterilized jars and seal. Store in the refrigerator until ready to serve.
