Ingredients
150 g | crème fraîche |
1 pack(s) | vanilla sugar |
500 g | rock melon pulp, cut into 2cm cubes |
4 | plums, pitted and chopped roughly |
2 stalk(s) | cinnamon |
75 g | sugar |
200 ml | orange juice |
3 sprig(s) | lemon balm |
25 g | butter |
Instructions
Stir the vanilla sugar into the crème fraîche. Chop the lemon balm.In a saucepan, melt the butter. Add the cinnamon and the plums. Stir fry the plums for 1-2 minutes. Sprinkle with the sugar and cook stirring until caramelized. Remove from the pan and set aside. Discard the cinnamon.
Pour the orange juice into the saucepan and bring to a boil. Add the plums and the melon to the juice and cook for 2 minutes. Take from heat and allow to cool.
Serve the compote, sprinkled with the lemon balm, together with the vanilla cream.
