Mediterranean chicken recipe details
Ingredients
4 | chicken fillets, cut into bite-size pieces |
25 g | flour |
2 tbsp | olive oil |
60 g | butter |
1 large | onion, chopped |
1 clove(s) | garlic, minced |
1 | green bell pepper, seeded, diced |
100 g | mushrooms, chopped |
300 g | tomatoes, canned, chopped |
60 ml | dry white wine |
180 ml | chicken broth |
120 ml | double cream |
fresh parsley, chopped |
Instructions
Preheat oven to 180°C.Toss the chicken pieces in the flour.
Heat the oil and butter in a frying pan. Add chicken, onion and garlic and sauté, while stirring, for about 3-5 minutes. Add the bell pepper and mushrooms and cook for a further two minutes. Add the tomatoes and cook for another minute.
Transfer everything into a shallow baking dish, sprinkle with parsley and pour over the stock and wine.
Cook in the oven for 30 minutes. Ten add the cream and cook for a further 15 minutes.
