Medallion of pork fillet casserole recipe details
Ingredients
8 | medallions of pork fillet |
12 slice(s) | streaky bacon |
200 g | single cream |
1 | onion, finely chopped |
2 tbsp | tonato purée |
300 g | tomatoes, peeled and chopped |
2 clove(s) | garlic, minced |
cayenne pepper | |
salt and pepper | |
2 sprig(s) | basil, chopped leaves |
40 g | butter in flakes |
3 tbsp | breadcrumbs |
Instructions
Grease a casserole dish. Wrap each medallion tightly with a slice of bacon and place into the casserole side by side.Preheat the oven to 180°C.
Heat oil in a saucepan and sauté onion and garlic until translucent. Add the tomato purée and cook stirring for 30 seconds. Add the tomatoes and cook for approximately 5 minutes over low-medium heat, stirring frequently. Add the cream and bring to a boil. Season to taste with salt, pepper and cayenne pepper and stir in the basil.
Pour the sauce over the meat. Sprinkle with breadcrumbs and butter flakes.
Bake for about 30 minutes. Serve with French bread.
