Meatballs with pasta in tomato sauce recipe details
Ingredients
80 g | pasta |
1 small | courgette, diced |
1 | shallot, chopped |
125 g | beef mince |
salt and cayenne pepper | |
1 tsp | oil |
1 tbsp | tomato puree |
75 ml | tomato juice |
50 ml | vegetable stock |
½ tsp | rosemary |
½ tsp | thyme |
some | Worcestershire sauce |
Instructions
Cook the pasta in salted water until al dente. Drain the pasta.Season the mince with salt, pepper and Worcestershire sauce. Shape into small meatballs.
In a pan, heat the oil and fry the balls until brown and crispy all around. Remove from the pan and set aside.
Add the shallots and courgette into the pan and fry for 3-4 minutes. Stir in the tomato purée and cook for 1-2 minutes. Pour in the tomato juice and the stock. Season to taste with salt, pepper, rosemary and thyme. Return the meatballs and simmer over low heat for 3-4 minutes.
Serve the cooked pasta together with the meatball sauce.
