Meat loaf with pumpkin seeds recipe details
Ingredients
4 slice(s) | white bread |
100 g | onion |
750 g | minced meat, mixed; pork and beef |
1 | egg |
45 g | pumpkin seeds, shelled |
1 tbsp | mustard |
salt and pepper | |
100 g | mozzarella cheese, grated |
2 tbsp | breadcrumbs |
1 tsp | thyme |
500 g | tomatoes |
3 | spring onions |
½ bunch(es) | basil |
Instructions
Preheat the oven to 180°C.Soak the bread in cold water. Finely dice the onions. Place the minced meat into a large bowl. Squeeze the bread and add the bread, onions, pumpkin seeds and mustard to the meat. Knead until well combined. Season with salt and pepper and knead in the grated mozzarella, the breadcrumbs and the thyme.
With damp hands form the mixture to a loaf. Place in a greased casserole dish. Transfer into the preheated oven and roast for 50 minutes.
In the meantime dice the tomatoes, slice the spring onions and cut the basil leaves in stripes.
After 30 minutes roasting time place the tomatoes around the meat loaf.
Remove the meat loaf from the casserole dish and place on a preheated platter. Leave to stand for 10 minutes.
Add the spring onions to the tomatoes in the casserole dish. Leave the dish with the vegetables in the still hot oven for further 10 minutes. Season to taste with salt and pepper. Spoon the vegetables into a bowl, and sprinkle with the fresh basil.
Serve the meat loaf with pasta or mashed potatoes together with the vegetables.
