Ingredients
25 g | raisins |
25 g | pine nuts, toasted and chopped |
600 g | beef mince |
2 tbsp | breadcrumbs |
1 | egg |
½ tsp | cumin |
salt and freshly ground black pepper | |
½ tsp | chili powder |
2 tbsp | oil |
2 tbsp | butter |
1 cup(s) | rice |
2 cup(s) | water |
6 sprig(s) | mint, chopped |
250 g | yoghurt |
10 | dried apricots, chopped |
1 tbsp | curry powder |
Instructions
In a saucepan, heat the butter and cook the rice, stirring, until lucent. Add the water, a good pinch of salt, curry powder, the apricots and raisins and bring to the boil. Cook over low heat until the rice is tender and the liquid soaked up.
In a bowl, mix together the minced meat, pine nuts, breadcrumbs and the egg. Season with salt, cumin and chili. Form 8 meat balls. In a pan, heat the oil and fry the meat balls until golden brown all around.
Mix together the yoghurt and the mint. Season to taste with salt and pepper.
Serve the meat balls together with the yoghurt sauce and the rice.
