Ingredients

1 l whipping cream
4  eggs
1  apple
250 g sugar
100 g marzipan
100 g raisins
1 tsp cinnamon
2 cl rum

Instructions

Cut the peeled and cored apple into small pieces. Grate the marzipan.

Over a hot water bath, whisk the eggs with the sugar until creamy. Then whisk over a cold water bath until cooled.

Whip the cream and fold in the apple pieces, the marzipan, raisins, rum and cinnamon. Gently fold in the egg mixture.

Freeze in a suitable container or use an ice cream maker, if available.
