Ingredients
400 g | salmon fillet, sliced |
1 tsp | coriander seed |
1 tbsp | soy sauce |
1 | lemon, grated rind |
1 | lime, grated rind |
100 ml | white wine |
2 tbsp | water |
Instructions
Roast the coriander seed in a dry saucepan, until fragrant. Transfer into a mortar and crush.In a separate saucepan heat the water with the white wine and add the soy sauce, lemon zest and lime zest and roasted coriander seed. Bring to the boil, then remove from heat, set aside and let steep for 30 minutes.
Pour the marinade over the salmon, cover and let steep in the refrigerator for at least 1 hour.
Grill the marinated salmon turning just once.
