Marinated pork medallions with a fried ginger apple compote recipe details
Fresh pork medallions are marinated in a balsamic vinegar and garlic blend, then topped with a fresh homemade fried ginger apple compote.

Ingredients
Serves: 2- 2 cups balsamic vinegar
- 2 tablespoons garlic
- 1 tablespoon fresh thyme
- 1 cup olive oil
- 3 (2 inch) slices fresh pork loin
- 1/2 cup butter
- 1/4 cup brown sugar
- 1 fresh apple, sliced thin
- 1 tablespoon fresh grated ginger
- 1/4 cup dried cherries
- pinch of fresh ground nutmeg
- pinch of cinnamon
Preparation method
Prep: 15 mins | Cook: 20 mins | Extra time: 30 mins1. Blend vinegar, garlic and thyme in a food processor. Once blended, add oil slowly so that it may emulsify. Once that’s done, pour over sliced pork and allow to sit for 30 minutes.
2. Preheat a grill for medium heat, and lightly oil the grate.
3. Once marinated, place pork directly on grill, and cook, turning occasionally, until an instant-read thermometer inserted into the center reads 160 degrees F (70 degrees C), about 12 minutes.
4. While pork is cooking, melt butter in sautee pan. Add brown sugar and blend until it simmers. Then add apples, ginger, cherries, nutmeg and cinnamon. Allow to cook until apples are soft. Once pork is cooked to proper fan medallions over any starch and top with apple compote
