Marinated duck breasts with coconut peanut sauce recipe details
Ingredients
3 | duck breasts |
For the marinade: | |
2 tsp | lemongrass, centre part finely chopped |
2 clove(s) | garlic, finely chopped |
2 | shallots, finely chopped |
3 tsp | soy sauce |
1 tsp | freshly ground black pepper |
2 tsp | fish sauce |
3 tbsp | coconut milk |
For the sauce: | |
125 ml | water |
1 tbsp | fish sauce |
1 tbsp | white vinegar |
½ tsp | sugar |
3 tbsp | peanuts, roasted and ground |
4 tbsp | coconut milk |
some | salt |
Instructions
Mix the marinade ingredients and add the duck breasts. Marinade for 2 hours or overnight in the fridge.For the sauce mix water, fish sauce, vinegar and sugar and bring to the boil. Simmer for 5 minutes, remove from the heat and set aside.
Remove breasts from the marinade and arrange on a rack in a roasting tin. Roast in a preheated oven at 180ºC for about 20 minutes, turning once. Brown under a hot grill for about 2 minutes.
Reheat the sauce and bring to the boil. Add the ground peanuts and cook, stirring, for 1 minute. Add the coconut milk, season to taste, and simmer for 2 minutes.
Cut each duck breast diagonally into slices and serve with the sauce immediately.
