Marinade for fish recipe details
- Ingredients:
- 1/4 cup olive oil
- 1 clove garlic, chopped
- 1/4 teaspoon cayenne pepper
- 1 teaspoon grated lemon rind
- juice of 1 orange
- 1 Tablespoon each, chopped basil and parsley
- 1 Tablespoon soy sauce
- 1/4 cup red onion
Mix all ingredients together and pour over fish. Do not marinate for more than 1 hour, as the fish will begin to cook.
Cook fish over charcoal, or on a gas grill, 8 to 10 minutes a side and serve with Mango Salsa.
