Ingredients
3 | mangoes, peeled, 2 mangoes chopped, 1 mango diced |
530 ml | water |
90 g | sugar |
1 tbsp | gelatin |
60 ml | whipping cream |
Instructions
Combine chopped mangoes and 60 ml water in a blender and process until smooth. Press puree through a fine sieve over a bowl and discard solids.
Bring 180 ml water to a boil in a medium saucepan. Add sugar and stir until dissolved. Remove from heat.
Stir in the remaining water, add gelatin and let stand for 1 minute.
Add the mango puree, stirring with a whisk. Pour the mixture evenly into 8 ramekins. Cover and chill overnight.
For garnish, top evenly with diced mango.
To serve, whip cream and serve with pudding.
