Maine Blueberry Gateau recipe

- Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/3 teaspoon salt
- 1/2 cup unsalted butter (room temperature)
- 1 cup sugar
- 2 large eggs
- 2-1/2 cups fresh or frozen Maine blueberries
- 1 teaspoon lemon juice
- Confectioners’ sugar
Instructions:
Preheat oven to 350 degrees. Lightly coat 9-inch springform pan with vegetable oil; dust with flour. Set aside.
Sift flour, baking powder, and salt. Set aside. On medium speed, mix butter and sugar until light and fluffy. Add eggs, one at a time, and continue blending until blended. Reduce mixer speed to low. Gradually add flour mixture. Beat until blended. Pour batter into floured pan. Toss blueberries with 1 teaspoon flour and 1 teaspoon lemon juice. Spoon berry mixture over batter. Bake about 1 hour. Cool. Transfer cake to plate, berry side up. Dust with confectioners’ sugar.
