Ingredients
Serves: 4- 1 1/2 pounds 1-inch-thick mahi mahi fillet, cut into 20 cubes
- 1 teaspoon Old Bay(R) seasoning
- 1/2 teaspoon five-spice powder
- 4 thin slices ham, cut into strips as wide as the fish cubes
- 1/2 fresh pineapple — peeled, quartered lengthwise and cut into 16 chunks
- 1 small red onion, cut into bite-size pieces
- Vegetable oil, for brushing while grilling
- 1/4 cup tamari sauce
- 1/4 cup honey
- Juice of 2 limes
- One 1-inch piece fresh ginger, peeled and grated
- 1 tablespoon toasted sesame oil
Preparation method
Prep: 15 mins | Cook: 10 mins1. Preheat grill to medium heat.
2. Sprinkle Old Bay(R) and 5-spice powder on fish, then wrap each with a ham strip and arrange on metal skewers with pineapple and red onion. Coat lightly with oil.
3. Grill skewers for 5 minutes, then turn and continue grilling for about another 5 minutes, until fish is cooked thoroughly.
4. While fish is grilling, combine remaining ingredients in a saucepan and bring to a boil over medium heat. Boil for 3 minutes or so to thicken. Drizzle over skewers and serve.
