Ingredients

60 g unsweetened stoned dates, chopped
1 small tin of prunes in juice, apple juice is best
4 medium eggs, beaten
300 g dark muscavado sugar
1 tsp vanilla essence
4 tbsp drinking chocolate or cocoa
2 tbsp cocoa powder
175 g plain flour
60 g chocolate chips

Instructions

Preheat oven to 180°C/350°F/gas mark 4. Grease and line a 18x28cm cake tin.

Place the prunes and juice in a saucepan. Bring to the boil, cover, then simmer for about 10 minutes until soft. Beat to make a smooth purée, then leave to cool.

Stir together the cooled purée, beaten eggs, sugar and vanilla essence. Sift in the drinking chocolate, cocoa and flour then fold in together with the chocolate chips.

Spoon into the tin and bake for 25–30 minutes. Cut into 12, leave to cool for 10 minutes, then transfer to a wire rack.

Optional icing: mix 125g icing sugar, 1–2tsp water, and 1tsp vanilla essence together then drizzle over the cooled brownies.
