Long bean and potato curry recipe details
Ingredients
3 | potatoes, peeled, diced |
500 g | long beans, diced |
2 | tomatoes, chopped |
2 | onions, chopped |
1 tbsp | ginger/garlic paste |
2 tsp | coriander powder |
½ tsp | red chilli powder |
½ tsp | turmeric powder |
1 | green chilli pepper |
pinch(es) | coriander leaves, chopped, for garnishing, |
salt, to taste | |
2 tbsp | oil |
Instructions
Heat the oil in a wok or deep pan. Fry the onions in the oil till their colour changes to golden brown. Add the ginger/garlic paste and stir for a few seconds. Now add the tomatoes along with half of the chopped green chilli, coriander powder, red chilli powder and turmeric powder. Fry the spices with the tomatoes well.When the mixture is juicy and the oil has separated add the potatoes and the long beans. Add salt and stir. Cover the wok and let cook on low to medium heat for 15 minutes or until the vegetables are cooked.
Garnish with coriander leaves and the remaining chopped green chilli.
Serve with Chapati.
