Ingredients
3 medium | tomatoes,seeded and chopped |
2 medium | avacados,pitted,peeled and chopped (reserve shells) |
1 medium | cucumber,seeded and chopped |
3 sprig(s) | cilantro or parsley |
125 g | crumbled cheese such as feta,blue or gorgonzola |
450 g | cooked lobster meat cut into bite-size pieces |
Instructions
In a serving bowl, combine the tomatoes, avocados, cucumber, and lobster and dressing of your choice, toss to coat well. On a bed of lettuce place 1 shell on each of 4 plates and fill with salad. Sprinkle with cheese and serve with bread sticks.Preparation time:
