Lobster Salad in Avocado Boats recipe

|3 medium||tomatoes,seeded and chopped|
|2 medium||avacados,pitted,peeled and chopped (reserve shells)|
|1 medium||cucumber,seeded and chopped|
|3 sprig(s)||cilantro or parsley|
|125 g||crumbled cheese such as feta,blue or gorgonzola|
|450 g||cooked lobster meat cut into bite-size pieces|
In a serving bowl, combine the tomatoes, avocados, cucumber, and lobster and dressing of your choice, toss to coat well. On a bed of lettuce place 1 shell on each of 4 plates and fill with salad. Sprinkle with cheese and serve with bread sticks.
