Ingredients
2 tbsp | goose fat |
1 medium | onion, peeled and diced |
1 | Granny Smith apple, peeled, cored and diced |
1 | large head of red cabbage, cored and sliced thin |
1 | potato, peeled and diced |
1 tbsp | sugar |
1 pinch(es) | ground cinnamon |
salt & freshly ground pepper to taste | |
125 ml | red wine |
4 tbsp | red wine vinegar |
2 | bay leaves |
5 | cloves |
1 ½ tsp | corn starch |
Instructions
Heat the fat in a large saucepan and add the onion and the apple; sauté for 5 minutes.Dissolve corn starch in one tablespoon liquid.
Add all solid ingredients and half of the liquid and cook, covered over low heat for 1 hour, stirring occasionally.
Add remaining liquid; correct the seasonings, if necessary.
Add dissolved corn starch, stir and simmer a few more minutes.
Serve hot.
Note: Vegetable oil may be substituted for the goose fat, but it just won’t taste the same.
