Ll s lentil soup recipe details
Ingredients
2 ½ liter(s) | water |
500 g | lentils |
3 | pork hocks, fresh or smoked (optional) |
500 g | slab bacon or salt pork, diced |
500 g | Kielbasa (Polish sausage), diced |
500 g | potatoes, peeled and diced |
250 g | celery root (celeriac), peeled and diced |
250 g | celery stalk, cleaned and diced |
500 g | leek, cleaned and diced (include tender green part) |
250 g | carrots, cleaned and diced |
salt & pepper, to taste | |
red wine vinegar, to taste (don’t skimp) | |
½ tsp | sugar |
1 ½ tsp | savory, dried |
Instructions
In large (at least 10 quart) stockpot, bring water with lentils, savory & pigs knuckles to boil; boil 2-3 minutes, turn off heat, leave covered for 1 hour.In large frying pan sauté slab bacon & kielbasa over low to medium heat, to degrease (do not brown); drain & discard rendered fat.
After 1 hour, remove pork hocks from pot, separate meat from bones, discard bones, dice meat.
Add all meats and vegetables to pot, bring to boil for a few minutes, stirring occasionally. Add a few dashes of vinegar, turn heat down to simmer for 1 to 1˝ hours or until ingredients reach desired texture, stirring occasionally.
Add salt, pepper and vinegar to taste, simmer 2 more minutes.
Note: Soup can be frozen and reheated on stove top, as lentils may explode in microwave
