Liver and bacon casserole recipe details
Ingredients
1 lb | lambs liver |
4 | rashers of smoked back bacon |
1 large | red onion, chopped |
2 clove(s) | garlic, finely sliced |
1 pint(s) | lamb stock or use a cube |
2 tsp | tomato puree |
2 tsp | mixed fresh herbs (thyme, rosemary, parsley) |
salt and freshly ground black pepper, to taste | |
1 tbsp | seasoned flour |
Instructions
Preheat the oven to 180°C, 350°F.Chop the bacon and fry in its own fat for a couple of minutes, until it is cooked but not too brown. Coat the liver in the seasoned flour and place in a casserole dish. Add the bacon.
Fry the onion and garlic until softened and just starting to take some colour. Pour in the stock, the tomato puree and herbs and bring to the boil, stir well and season to taste. Pour the sauce over the liver and bacon, and place the casserole covered in the oven and cook for ¾ to 1 hour until the liver is done.
Serve with mustard mash potatoes and cabbage.
