Ingredients
150 g | icing sugar |
2 | eggs, whites only |
1 pinch(es) | salt |
15 g | dark chocolate, 60%-70% |
Instructions
Preheat oven to Gas Mark 1/140°C/275°F.Sift the icing sugar.
Whisk the egg whites with the pinch of salt until stiff. Add the icing sugar, 1 tablespoon at a time, whisking well after each addition, until the mixture is thick.
Transfer the ingredients to a icing bag and pipe little ghosts onto a lined baking tray and bake in a preheated oven Mark 1/140°C/275°F for approximately 1 hour, or until dry and crisp. Allow the meringues to cool down.
Chop the dark chocolate fine, place it in a bowl and set the bowl over a saucepan of very hot (not boiling) or gently simmering water until melt.
Transfer the chocolate into a small freezer bag, with a small hole in one corner, and draw faces onto the ghosts.
