Linguine with seafood recipe details
Ingredients
500 g | linguine |
800 g | tomatoes, fresh, peeled, seedless, minced |
125 g | fish fillets, diced |
125 g | squid, cleaned, cut into rings |
16 | mussels, fresh, washed, scrubbed |
12 | shrimps, raw, cleaned, pealed and gutted |
60 ml | white wine, dry, Italian |
2 | onions, minced |
3 tbsp | olive oil, extra virgin |
2 tbsp | butter |
4 tbsp | basil leaves, fresh, chopped |
4 tbsp | basil leaves, fresh, for garnish |
salt to taste | |
pepper, ground , fresh , to taste | |
Parmesan cheese, fresh, granted |
Instructions
Heat oil and butter in a frying pan at medium heat. Saute the onions until golden.Add the wine, tomatoes and basil. Lower the heat and let it boil for 10 minutes. Add the mussels, shrimp and the fish. Cook for 5 more minutes. Add the squid and cook for about 2 minutes.
Cook the pasta al dente as described on the package in plenty of boiling water with salt and 1 tablespoon of extra-virgin olive oil.
Drain & keep hot.
Add the seafood mix to the pasta, garnish with basil leaves and serve right away. Serve also with freshly grated parmesan and a twist of black pepper.
