Lindsay's famous cranberry nut bread details
- Ingredients
- 2 cups all-purpose flour
- 3/4 cups sugar
- 1-1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup butter (softened)
- 1 Tablespoon fresh grated orange peel
- 3/4 cup orange juice
- 1 hen’s egg
- 1 cup finely chopped fresh cranberries
- 1/2 cup chopped nuts
Mix flour, sugar, baking powder, baking soda, and salt well in large bowl. Stir in melted butter until mixture is crumbly. Stir in orange juice and egg until just wet. Do not over stir as it makes the bread tough. Add fresh grated orange peel (do not add earlier as “No rind before it’s time”). Stir in cranberries and nuts. Add to a well greased 9 x 5 x 3-inch pan. Bake at 350 degrees for about 1 hour or until a cake testing rod comes out clean. Wait at least 1 hour before slicing.
Serves: from 1 to 8, depending on how thick you slice it. Serving size: 1 slice.
