Light tomato sauce recipe details
Ingredients
1 medium | onion, chopped |
2 clove(s) | garlic, finely chopped |
1 tbsp | olive oil |
6 large | tomatoes, peeled, seeded and chopped |
½ tsp | sugar |
½ tsp | basil, dried – or 1˝-2 tsp fresh |
60 ml | red wine |
salt and fresh ground pepper, to taste |
Instructions
In a medium saucepan, heat the oil on a medium heat and sauté the onion and garlic until translucent. Add the tomatoes and cook for about 3 minutes, followed by remaining ingredients. Reduce heat to a simmer and cook for another 15-20 minutes, when the tomatoes should have lost shape and texture. If not, allow another 5 minutes and add a little more wine if it appears to be drying out.Serve with hot, freshly cooked pasta – preferably fettuccine or tagliatelle – and top with fresh Parmesan or Pecorino.
