Lemon spinach and chickpea salad recipe details
Ingredients
400 g | chickpeas, drained |
120 ml | olive oil |
2 tsp | salt |
60 ml | lemon juice, freshly squeezed |
1 tsp | black pepper, freshly ground |
200 g | spinach leaves, washed, dried and minced |
Instructions
In a mixing bowl combine all the ingredients. Stir well with a wooden spoon.Allow the flavors to develop by marinating the salad in the refrigerator for at least an hour.
Remove from the refrigerator and stir again well before serving.
