Ingredients
500 g | soy beans |
1 handful | fresh mint, chopped |
1 large | onions, chopped |
1 | lemon, grated rind |
For the Dressing: | |
3 tbsp | olive oil |
1 | lemon, juiced |
1 tsp | cummin, ground |
½ tsp | mustard, ground |
2 clove(s) | garlic, crushed |
½ tsp | salt |
Instructions
Soak beans in water overnight; drain.Sauté onions until soft and then combine with drained beans in a saucepan and boil for approximately 1.5 hours. Drain.
Combine all ingredients for the dressing and pour over the beans while they are hot. Mix in chopped fresh mint. Grate in rind of one lemon.
