Ingredients
7 large | egg whites |
¼ tsp | salt |
400 g | caster sugar |
1 large | lemon, zest only |
150 g | flaked almonds, toasted |
Instructions
Preheat oven to Gas Mark ½, 130ºC, 250ºF, Grease a baking tray and cover with baking parchment.In a clean bowl, whisk the egg whites with the salt until just becoming stiff. Gradually add the sugar while continuing to whisk until stiff peaks form.
Carefully fold in lemon zest and toasted almonds.
Drop tablespoons full of mixture onto the tray, leaving about 2-inches or 5cm all around. Alternatively, you could pipe them using a large, decorative nozzle and piping bag.
Bake for 45-60 minutes until dry. They may colour slightly but should not brown. Allow to cool completely before removing from tray. If storing, keep in an airtight container. They will absorb moisture if stored long-term.
Sometimes eaten as a confection, they are also used as a component of other desserts.
