Lemon curd recipe details
Ingredients
250 g | sugar |
6 medium | eggs, yolks only |
120 ml | lemon juice, freshly squeezed |
120 g | butter |
1 tbsp | lemon peel, grated |
Instructions
Beat together the sugar and egg yolks in a saucepan. While stirring, gradually add lemon juice.Cook over low heat while stirring, until mixture thickens, 10-15 min minutes. Do not bring to the boil. Remove from heat and allow to cool slightly.
Add butter and lemon peel. Stir and leave to cool again.
Spread on your favourite scones.
