Ingredients
For the Batter: | |
230 g | butter |
200 g | flour |
60 g | sugar |
For the Filling: | |
4 medium | eggs, beaten |
260 g | sugar |
4 tbsp | flour |
60 ml | lemon juice |
1 tbsp | grated lemon peel |
sugar, to taste |
Instructions
Preheat ven to 170°C.Batter:
Combine butter, flour and sugar. Pat into an ungreased pan and bake for 18-20 minutes.
Filling:
Blend together eggs, sugar, flour, lemon juice and lemon peel. Pour over baked crust. Return to oven and bake for another 20 minutes.
Remove from oven, loosen around edges and cut into bars. Sift more sugar over the top while warm.
