Lemon and ginger chicken recipe details
Ingredients1. Chicken breasts (2whole)
2. oil (for deep frying)
3. corn flour (1.5tbsp)
4. egg whites (3)
For sauce Ingredients
1. Shallot (1)
2. sugar (2tbsp)
3. honey (1tbsp)
4. water (1tbsp)
5. corn flour (1tbsp)
6. green ginger (2.5cm long)
7. grated green ginger (1tsp)
8. chicken stock (240ml)
9. water (240ml)
10. lemon juice (600ml)
Method of preparation
1. Take chicken breasts, remove skin and meat from the bones and cut into 5 mm strips.
2. Take a small bowl, mix egg whites and corn flour in it and then coat chicken strips with this mixture.
3. Take a frying pan, heat oil in it and then fry the chicken strips in it until they get golden brown. Drain the chicken strips in absorbent paper. Take out the excess oil from the pan and keep 1 tablespoon of oil in it.
4. Now place the chicken in a serving plate and keep it warm. Add grated ginger, chicken stock, water, lemon juice, honey and sugar in the pan and boil this mixture.
5. Mix water in the corn flour and then add it to the pan. Mix it until the sauce gets boil and thickens. Turn down the heat and keep the mixture to simmer for about 2 minutes.
6. Heat the reserved oil in the pan. Take ginger, peel it and slice it thinly and add it in the pan, fry it for about 1 minute and then add the prepared sauce in the pan. Keep it to simmer for about 2 minutes and then pour it over the chicken. Decorate the chicken with chopped shallot and serve it.
