Leicestershire pudding recipe details
Leicestershire pudding is quite different from your standard pudding because it is in fact not sweet but rather a suet-based dish. Unlike typical sweet puddings, it has a more of a savory, dense texture similar to Yorkshire pudding, but quite heavier. This regional dish reflects the rustic cooking style of Leicestershire, England. Ingredients
230 g raisins, seedless |
115 g flour |
115 g shredded suet |
2 eggs, beaten |
1 tsp grated lemon peel |
1 tsp freshly grated nutmeg |
30 ml brandy |
milk |
Instructions
1. Mix together the raisins, flour and suet in a bowl.
2. Stir in the eggs, lemon peel, nutmeg and brandy.
3. Mix well.
4. Knead in sufficient milk to get a firm dough.
5. Spoon the mixture into a greased pudding basin.
6. Evenly divide it in the basin then cover with buttered greaseproof paper and kitchen foil.
6. Tie down securely.
7. Transfer the basin into a saucepan filled with sufficient boiling water to come half-way up the basin. Cover with a lid then steam for 4 hours. Add more water if necessary.
8. Turn out the pudding onto a warmed serving dish and serve with whipped cream with brandy flavour or custard.
