Ingredients

For the pastry:
200 g flour
100 g soft butter
1 medium egg
salt
For the topping:
250 g parsnip, peeled and sliced
250 g leek, sliced
125 g cherry tomatoes, halved
2 clove(s) garlic, minced
2  onions, chopped
1 tbsp oil
125 ml single cream
2 medium eggs
125 g freshly grated Cheddar cheese
freshly grated nutmeg
salt and freshly ground black pepper

Instructions

Sift the flour into a bowl. Add the egg, the butter and a pinch of salt. Knead until well combined. Form the pastry to a ball and place in the fridge for 30 minutes.

Preheat the oven to 200°C. Roll out the pastry large enough to line a buttered quiche or pie form. Prick the pastry with a fork several times. Bake for 10 minutes.

In a pan, heat the oil. Sauté the vegetables, stirring, for 5-6 minutes. Allow to cool down a bit, then divide the vegetables on the pastry base. Mix together the cream, eggs and the cheese. Season with salt, pepper and nutmeg. Pour the mixture evenly over the vegetables. Bake for 20-30 minutes.

Serve warm or cold.
