Leek and chicken soup recipe details
Ingredients
150 g | chicken breast fillet, cut into strips |
1 stalk(s) | leek, trimmed and thinly sliced |
salt and freshly ground black pepper | |
100 g | button mushrooms, halved |
1 tbsp | oil |
250 ml | chicken stock |
1 tbsp | soft cream cheese |
Instructions
In a saucepan heat the oil. Stir-fry the meat until slightly golden and cooked through. Remove from the saucepan.Fry the mushrooms and the leek in the pan for 2-3 minutes. Return the chicken and deglaze with the stock. Bring to a boil and simmer for 2-3 minutes.
Stir in the cheese and season to taste with salt and pepper.
