Ingredients
500 g | small young potatoes, halved |
250 g | green beans |
For the dressing: | |
60 ml | olive oil |
2 | red chili peppers, seeded and sliced |
1 clove(s) | garlic, minced |
1 tbsp | red wine vinegar |
½ tsp | ground cumin |
1 tbsp | black cumin |
½ bunch(es) | mint, chopped |
½ bunch(es) | cilantro, chopped |
salt and freshly ground black pepper, to taste |
Instructions
Cook the potatoes in salted water for 10-15 minutes or until done. Drain and allow to cool. Cook the beans in salted water for 8-12 minutes. Drain and allow to cool.In a salad bowl, mix together all dressing ingredients. Stir in the potatoes and the beans and toss well. Check seasoning and correct if necessary.
