Ingredients
100 g | pistachios, chopped |
25 g | pistachios, shelled |
2 | peaches, peeled and sliced |
1 | lemon, juice and zest |
4 medium | eggs |
200 g | sugar |
1 pack(s) | vanilla sugar |
1 pinch(es) | salt |
600 g | ricotta cheese |
2 tbsp | cornflour |
7 tbsp | semolina |

Instructions
In a bowl, whisk the eggs with 150g of sugar, vanilla sugar and salt until creamy. Mix the ricotta with cornflour, semolina, lemon zest and lemon juice. Combine with the egg mixture.Sprinkle a buttered cake form with breadcrumbs. Spread 1/3 of the batter on the bottom of the cake form. Spread half of the peaches and chopped pistachios on top. Add a layer of batter, the remaining peaches and chopped pistachios and finish with the remaining batter.
Bake in the preheated oven at 150°C for 75-80 minutes.
Caramelize the remaining sugar. Stir in the remaining pistachios. Spread on a lined baking tray and allow to cool for 15 minutes. Chop the caramelized pistachios and sprinkle the cake with them.
