Ingredients

100 g	pistachios, chopped
25 g	pistachios, shelled
2	peaches, peeled and sliced
1	lemon, juice and zest
4 medium	eggs
200 g	sugar
1 pack(s)	vanilla sugar
1 pinch(es)	salt
600 g	ricotta cheese
2 tbsp	cornflour
7 tbsp	semolina
	butter
	breadcrumbs

Instructions

In a bowl, whisk the eggs with 150g of sugar, vanilla sugar and salt until creamy. Mix the ricotta with cornflour, semolina, lemon zest and lemon juice. Combine with the egg mixture.

Sprinkle a buttered cake form with breadcrumbs. Spread 1/3 of the batter on the bottom of the cake form. Spread half of the peaches and chopped pistachios on top. Add a layer of batter, the remaining peaches and chopped pistachios and finish with the remaining batter.

Bake in the preheated oven at 150°C for 75-80 minutes.

Caramelize the remaining sugar. Stir in the remaining pistachios. Spread on a lined baking tray and allow to cool for 15 minutes. Chop the caramelized pistachios and sprinkle the cake with them.
