Ingredients
Serves: 6- 2 tablespoons olive oil
- 5 cloves garlic, crushed
- 2 pounds lamb stew meat
- 1 onion, coarsely chopped
- 3 tablespoons curry powder
- 2 tablespoons soy sauce
- 1 red sweet pepper, chopped fine
- 1 yellow sweet pepper, chopped fine
- 1/2 cup chopped dried apricots
- 1/2 cup chopped dried pineapple, or another dried fruit of your choice
- 1/4 cup raisins
- 1/2 cup orange juice
- 1 can light coconut milk
- 1 large sweet potato, peeled and diced
- 2 cups beef stock
- Crushed red pepper flakes (optional)
Preparation method
Prep: 45 mins | Cook: 2 hours 15 mins1. In a large Dutch oven, heat the oil. Add the garlic and sauté for 1 minute.
2. Add the stew meat and onion. Cook until the meat is browned and the onion is translucent.
3. Add the curry and soy sauce; cook 3 minutes.
4. Add the red and yellow peppers and sauté for 3 to 5 minutes.
5. Add the remaining ingredients and let simmer for 2 hours.
