Lamb in avocado sauce recipe details
Ingredients
½ | ripe avocado, peeled and diced |
1 clove(s) | garlic, minced |
30 g | yoghurt |
30 ml | vegetable stock |
1 tsp | lemon juice |
salt and freshly ground black pepper | |
80 g | lamb fillet |
1 tsp | oil |
50 g | rocket |
50 g | lettuce |
50 g | cherry tomatoes, halved |
20 g | mushrooms, sliced |
Instructions
Purée the avocado flesh with garlic, yoghurt, stock and lemon juice. Season to taste with salt and pepper.In a pan heat the oil. Fry the meat for 2-3 minutes all around.
Mix together the rocket, lettuce, mushrooms and tomatoes. Season to taste with salt and pepper.
Serve the lamb and the salad drizzled with the avocado sauce.
