Lamb and pumpkin stir fry recipe details
Ingredients
500 g | pumpkin pulp, cut into 2cm cubes |
1 bunch(es) | spring onions, sliced |
4 tbsp | oil |
salt and freshly ground black pepper | |
2 sprig(s) | mint, chopped |
200 g | yoghurt |
400 g | lamb mince |
cinnamon | |
cumin |
Instructions
Stir the mint into the yoghurt. Season to taste with salt and pepper.In a large pan, heat the oil. Stir-fry the pumpkin for 5 minutes. Add the lamb mince and stir-fry for another 5 minutes or until the lamb is crumbly and done. Add the spring onions and cook stirring for 2 more minutes. Season to taste with salt, cumin and cinnamon.
Serve with the yoghurt dip and fresh white bread.
