Kona coffee cup muffins, recipe Rating: 4.5

Ingredients:
1/4 cup margarine
1/2 cup sugar
2 eggs
2 cups flour
2-1/2 teaspoons baking powder
1/2 cup milk
1/4 cup strong coffee (Kona coffee)
Instructions:

Blend margarine, sugar, and eggs until creamy. Add sifted flour and baking powder. Add milk.

Spray 9 “Fire-King” coffee cups; fill 1/2 full with batter. Drop 1 teaspoon jam in center of each and add more batter to each cup, covering jam. Bake in 350-degree oven for 30 minutes. Serve cup with saucer.
