2 medium kohlrabi
1  onion
2 tbsp butter
salt and pepper
freshly ground nutmeg
300 ml vegetable stock
200 ml milk
100 g single cream
2 tbsp flour
½ bunch(es) parsley
75 g grated Cheddar cheese
600 g salmon fillet, skinless
10 sheet(s) of lasagna, you may need a bit more or less
1 large beef tomato
125 g crème fraîche
3 tbsp freshly grated Parmesan cheese

Instructions

Wash, peel then cut the kohlrabi in stripes. Dice the onion. In a skillet heat the butter and sauté the onions together with the kohlrabi. Season with salt, pepper and nutmeg. Pour in the milk and the vegetable stock and bring to a boil. Cover and simmer over low heat for 3-5 minutes. In a bowl, mix together the single cream and the flour. Stir the mixture in the skillet and cook stirring for further 2 minutes. Wash, then pat dry the parsley. Pick the leaves from the stalks and chop. Add the parsley and the Cheddar cheese to the kohlrabi sauce.

Preheat the oven to 180°C.

Rinse the salmon with cold water, pat dry, then cut in slices. Divide some of the kohlrabi sauce in a casserole dish and cover with 2-3 lasagna sheets. Layer the kohlrabi, salmon and lasagna sheets in turn, finishing with lasagna sheets.
