Kohlrabi and salmon lasagna recipe details
Ingredients
2 medium | kohlrabi |
1 | onion |
2 tbsp | butter |
salt and pepper | |
freshly ground nutmeg | |
300 ml | vegetable stock |
200 ml | milk |
100 g | single cream |
2 tbsp | flour |
½ bunch(es) | parsley |
75 g | grated Cheddar cheese |
600 g | salmon fillet, skinless |
10 sheet(s) | of lasagna, you may need a bit more or less |
1 large | beef tomato |
125 g | crème fraîche |
3 tbsp | freshly grated Parmesan cheese |
Instructions
Wash, peel then cut the kohlrabi in stripes. Dice the onion. In a skillet heat the butter and sauté the onions together with the kohlrabi. Season with salt, pepper and nutmeg. Pour in the milk and the vegetable stock and bring to a boil. Cover and simmer over low heat for 3-5 minutes. In a bowl, mix together the single cream and the flour. Stir the mixture in the skillet and cook stirring for further 2 minutes. Wash, then pat dry the parsley. Pick the leaves from the stalks and chop. Add the parsley and the Cheddar cheese to the kohlrabi sauce.Preheat the oven to 180°C.
Rinse the salmon with cold water, pat dry, then cut in slices. Divide some of the kohlrabi sauce in a casserole dish and cover with 2-3 lasagna sheets. Layer the kohlrabi, salmon and lasagna sheets in turn, finishing with lasagna sheets.
Wash, then slice the tomatoes. Place the tomatoes over the lasagna sheets. Mix the Crème fraîche with the Parmesan and divide the mixture on top.
Bake for approximately 50 minutes.
