Karol's orange walnut breadfrench toast recipe details
- Make the Bread:
- 2 eggs
- 1/2 cup vegetable oil
- 4 cups flour
- 1-2/3 cup sugar
- 1/2 teaspoon salt
- 2 Tablespoons baking powder (1-1/2 Tablespoons at high altitude)
- 1 large orange, unpeeled
- 1 cup finely chopped walnuts
- 1-1/2 cups milk
- butter and flour for the baking pans
Beat eggs and gradually add oil. Beat for 1 minute. Sift dry ingredients and add to egg mixture. Cut the orange into pieces and place in blender at high speed until chopped fine. Add to batter. Slowly beat in milk and continue beating for 2 minutes. Turn out into two 8 x 5 inch loaf pans that have been buttered and floured. Let stand for 20 minutes. Sprinkle walnuts on top of loaves before baking.
Bake for 20 minutes at 400 degrees or until the dough has started to brown. Reduce temperature to 300 degrees and score top of bread lengthwise. Bake 40 minutes more until toothpick comes out clean. Let stand in pans on edge for 10 minutes before turning out.
French Toast: Cut the bread into reasonably thick slices and soak in an egg/cinnamon mixture. Cook on griddle over medium-high heat until brown. Turn once.
