This is my version of a tried and true meatloaf. It’s your classic style, just like any other you fondly remember from childhood.
Ready in: 1 hour 50 mins
Ingredients
Serves: 6- 2 eggs
- 1/2 cup milk
- 2 cups crushed corn flakes
- 1 pound ground sirlon
- 1/2 pound ground pork
- 1 large onion, finely chopped
- 1 rib celery, finely chopped
- 2 cloves garlic, minced
- 2 carrots peeled and finely grated
- 1/2 cup ketchup
- 1 tablespoon salt
- pepper to taste
- 2 tablespoons Dijon mustard
- Glaze
- 1 tablespoon dry mustard powder (Coleman’s(R))
- 2 tablespoons water
- 1 teaspoon tomato paste
- 1/2 cup light brown sugar
- 1/2 cup ketchup
Preparation method
Prep: 25 mins | Cook: 1 hour 15 mins | Extra time: 10 mins, cooling1. Heat oven to 375 degrees F. Grease a loaf pan.
2. Beat the eggs in a mixing bowl, then whisk in the milk until smooth. Stir in the corn flakes, and let soften 2 minutes. Mis in the remaining meatloaf ingredients, and pack into the prepared loaf pan.
3. Stir the glaze ingredients together until smooth, and spoon 1/4 cup of the glaze over the top of the meatloaf.
4. Bake in the preheated oven until the meatloaf registers 160 degrees F in the center on a thermometer, about 1 hour 15 minutes. Brush with the remaining glaze every 15 minutes during cooking. Let cool 10 minutes before slicing.
