Ingredients
2 kg | joint of mutton |
some | mustard |
some | mint leaves, chopped |
some | wine vinegar |
1 stalk(s) | leek, sliced |
¼ bulb(s) | celeriac, sliced |
2 | carrots, sliced |
2 | onions, sliced |
2 | bay leaves |
300 ml | water |
salt and freshly ground black pepper | |
4 tbsp | single cream |
2 tbsp | oil |
Instructions
Rub the mutton joint with the mint leaves from all sides and spread with mustard. Soak a tea towel in wine vinegar and wrap the mutton joint in the towel. Place into the fridge over night.In a large roasting tin with a lid heat the oil. Add the mutton joint and fry from all sides until browned. Stir in the vegetables and the bay leaves and fry for 2 more minutes. Add the water, cover with the lid and braise over low heat for 60 minutes. Turn the mutton joint and braise for 60 more minutes. Remove the mutton joint from the roasting tin and keep warm.
Bring the sauce to a boil. If necessary, add some more water. Stir in the cream and cook for some minutes. Season to taste with salt and pepper.
Carve the mutton and serve with the sauce.
