A unique twist on stuffed chicken breasts made with Johnny’s(R) Garlic Spread & Seasoning, spinach and sun-dried tomatoes. I prefer using the sun-dried tomatoes that are actually dried, not the ones in oil.

Ingredients
Serves: 4- 2 tablespoons Johnny’s(R) garlic spread & seasoning
- 1 cup finely chopped spinach
- 1/2 cup grated Parmesan cheese
- 1 package cream cheese (room temperature)
- 1/4 cup sun-dried tomatoes, sliced into 1/4-inch strips
- 4 boneless chicken breasts (pounded)
- 4 tablespoons melted butter
- 1/2 cup Italian bread crumbs
Preparation method
Prep: 20 mins | Cook: 50 mins1. Preheat oven to 350 degrees F (190 degrees C).
2. Stuffing Mixture:
3. In a medium sized bowl, mix the Johnny’s, spinach, Parmesan cheese, cream cheese, and sun-dried tomatoes.
4. Chicken:
5. Pound the chicken breasts to about 1/4 inch.
6. Dredge one side of the chicken in the butter, coat with the bread crumbs.
7. Put about a 1-2 tablespoon sized dollop of the stuffing mixture on one edge of the un-coated side of the chicken.
8. Tightly roll-up the chicken and secure with 2-3 toothpicks.
9. Place a piece of aluminum foil on a 9×13-inch cookie sheet and lightly spray with non-stick spray. Place the chicken roll-ups on the aluminum foil.
10. Bake for 45-55 minutes until chicken is fully cooked and the stuffing melted.
11. If some of the roll-ups are larger than others, cover the smaller ones with aluminum foil after about 35 minutes to avoid burning and drying out.
