Jamaican Bulla Cake or Bulla Bread recipe
Ingredients
900 g | plain flour |
1 tsp | baking powder |
½ tsp | bicarbonate of soda |
¼ tsp | salt |
2 tbsp | unsalted butter |
¼ tsp | nutmeg |
½ tsp | ground cinnamon |
200 g | brown sugar |
Instructions
This is a basic recipe and it would normally be spiced up with fresh ginger or flavoured with chocolate.
Preheat oven to Gas Mark 4, 180°C, 350°F.
Melt the butter and set aside.
Add enough warm water to the sugar to form a saturated solution (where the sugar starts to crystallise out again as no more can be dissolved).
Combine all the dry ingredients in a large bowl, mixing with a wooden spoon. Make a well in the centre and pour in the butter and syrup. Mix to a dough.
Turn out dough onto a lightly floured surface and knead for 5 minutes. Roll out the dough to 1/8 inch or 3mm thick and cut out 4 rounds. Place the rounds on baking sheets and bake for about 25 minutes or until they rise.
Allow to cool on a wire rack before serving.
