Jalapeno cornbread recipe details
This is a wonderful one-pan meal that you can add to in many ways. You can substitute refried beans for the meat to make it for vegetarians. You can use any type of cheese, meat, or peppers you want. That is what makes this a excellent meal. It’s great the next day reheated. Serve on bed of lettuce and top with sour cream and picante sauce.

Ingredients
Serves: 6- 1 cup yellow cornmeal
- 1 cup milk
- 2 eggs, beaten
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup veggie oil
- 1 can cream-style corn
- 1 pound ground beef
- 1/2 pound bulk sausage
- 1/2 pound mild Cheddar cheese.
- 5 pickled or fresh jalapeno peppers, chopped (adjust amount to taste)
- 1 onion, chopped
Preparation method
Prep: 10 mins | Cook: 1 hour1. Combine the cornmeal, milk, eggs, salt, baking soda, oil, and corn in a bowl. Mix well and set aside.
2. Brown beef and sausage together in a skillet over medium heat; drain well when done.
3. Pour half of the corn batter into a well-greased baking dish lightly sprinkled with cornmeal (I use a 12 inch cast iron frying pan). Sprinkle cheese over batter then layer the meat mixture, the chopped onions, and the jalapeno peppers. Then top with remaining corn batter.
4. Bake in a preheated oven at 350 degrees F for about 50 minutes.
5. Serve on bed of lettuce top with sour cream and picante sauce.Cook Information Cleanup:
